Vegan Macaroni and Cheese

Just wanted to share my recipe I discovered after trial and error of making my own dairy free Mac & Cheese.... It's very easy to make!
This is for one serving. Please double or triple or quadruple recipe if serving for two or for your family.
Ingredients:
Gluten Free macaroni or non GM0 organic wheat macaroni
Daiya or For Your Heart shredded non-dairy cheese
1 small container plain non-dairy yogurt (oat, almond, or soy... don't recommend coconut, it's too sweet)
olive or avocado oil
Salt, Pepper or any seasoning/topping of your choice
Instructions:
Boil 1/4 cup (if noodles are small) or 1/3 cup (if noodles are larger) uncooked macaroni in small pan. Drain in colander and set aside. (While macaroni is cooking can do steps below)
Pre-heat oven to 350.
Brush olive or avocado oil in bottom of small casserole dish. Cover that with thin layer of non-dairy shredded cheese.
In separate bowl mix together 1/3 container of non-dairy yogurt and 1/4 cup of non-dairy shredded cheese.
Add boiled macaroni to mixture and stir.
Pour mixture over the cheese in small casserole dish. Sprinkle salt and pepper over top, or any seasoning of your choice (such as cayenne pepper or cajun spices or gluten free/non GM0 organic bread or cracker crumbs). Spread another thin layer of non dairy cheese over top before baking.
Bake in preheated 350 degree oven for 20-25 minutes.
Remove from oven and enjoy! Sprinkle with additional salt, pepper or seasonings if necessary.
(Instead of the yogurt you can try to melt the cheese with non-dairy milk and a little flour and seasonings, and pour that over the drained noodles... But it takes quite a while for the cheese to melt, and you have to continually stir the mixture for about 15 minutes to get it the right consistency.... I found the oven bake method was simpler and ended up with a creamier cheese sauce.)

Yes Actually I do. I’m getting together some recipes for a dear friend who doesn’t cook and we’re going to do lessons over the phone. Also some family recipes for my family. I would like to replicate a mushroom burger that Is yummy with less salt than usual. That may take a while! So I am thinking of a couple that I’ll have to remake so I can write down the recipe. Maybe a mushroom Spanish rice with cumin, that I’m tweaking for less salt. Will get back on that.

No problem. Next time I make that, I'll be sure to write down the recipe and pass it on. Have to pick up some mushrooms.
