In recent years, has Paul ever performed Buddy Holly songs live or included any on albums? Would be great to hear him cover.

Not in recent years. This is from sometime in the '80s I believe:

There's a film of Paul performing an acoustic version of PEGGY SUE in the early 1970s, a performance in THE REAL BUDDY HOLLY produced by BBC and MPL, Paul and The Crickets in the early 1980s, and two versions of IT'S SO EASY for the 75th Birthday of Charles Harden Holley and The Beatles version of WORDS OF LOVE.

John Lennon recorded PEGGY SUE for his ROCK AND ROLL album.

Ringo recorded THINK IT OVER for another 75th Birthday Album honoring Buddy.

Always liked his covers, when did he stop the Buddy parties?

I believe he added"It's So Easy" to the setlist of the Lubbock concert, back in 2014. Sometimes he sings that song at soundchecks as well.
