Cook of the House

SurSteven:
I knew there was a thread already for cooking. Am whippin' up some four cheese mashed potatoes!
I know. I like my title a lot better. Cook of the House says nothing to respond to. Oh well. Yum on the 4 cheese mashed potatoes. Do you just put any 4 in them or what?

It was great! I've got to get in the habit of cooking more often. How about you? Do you cook every night?
-
I'd rather pick something up like Blue just said she was gonna do. But most week days we cook. Weekends I try to take off. I have some containers of tomatoes that I may make some chili with...although they are good for soup too.
-
I've got to take off this holiday flub. Cooking more will help. I'm like you. I like to pick up something, but doing it a lot puts on weight, for me anyway.
-
yeah, tell me about it. lol. We eat a lot of chicken breasts but maybe that dressing on the salad isn't as good for me as it could be. hmmmm.

Tonight is potato night with the usual rosemary, za'atar, shallots, lemon and balsamic. It goes well with almost anything or as a dish on its own.

This does sound good. What is za'atar? Oh, ok. I found it. Here's a homemade recipe for it: Za?atar MAKES ABOUT 1/4 CUP Combine 1 Tbsp. chopped fresh oregano, 1 Tbsp. sumac, 1 Tbsp. ground cumin, and 1 Tbsp. sesame seeds. Stir in 1 tsp. kosher salt and 1 tsp. freshly ground black pepper. DO AHEAD: Can be made 2 weeks ahead. Store airtight at room temperature. Sounds good! Might have to try it.
-
A mixture of spices. Mine is sumac, thyme, marjoram, satureja, sesame seeds and salt.
-
Do you use fresh herbs or in the bottle?
-
Herbs in za'atar should always be fresh. Actually, they should always be fresh in anything.
-
Ok. So what do you do with the lemon and balsamic? Do the potatoes marinate in that?
-
Soak the potatoes in the balsamic and squeeze in the lemon with a little zest.
-
This sounds good! I'll have to try it. Thanks.
-
You are welcome. Just remember to parboil the potatoes before you add everything.
