OMG Nellie thanks for posting the photo I love it I have a little recipe that serves one for all the new veggies: SPAGHETTI FRITATA (serves one) 2 large eggs 2 tablespoons milk ½ teaspoon coarse salt 1/8 teaspoon ground pepper 1 ½ cups plain cooked spaghetti (great for leftover shaghetti) ½ cup shredded Jarlsberg or mozzarella cheese (or any kind you like) ¼ cup thawed frozen peas 1 teaspoon olive oil Heat broiler. In a medium bowl, whisk together 2 large eggs, 2 tablespoons milk, ½ teaspoon coarse salt, and 1/8 teaspoon ground pepper. Mix in 1 ½ cups plain cooked spaghetti, ½ cup shredded cheese, and ¼ cup thawed frozen peas. In a small (7-to 8-inch) broilerproof nonstick skillet, heat 1 teaspoon olive oil over medium-low heat. Pour in spaghetti mixture; cook until top is almost set, 5 to 7 minutes. Transfer to broiler, placing pan 4 inches from heat source; cook until set, about 1 minute. How easy is that? It's really good too

2: Happy Maccas Meatless Monday...Tuesday Edition Here is my Meatless Monday recipe..one day late GREAT NORTHERN WHITE CHILI (serves 1 medium onion, chopped 1 teaspoon minced garlic 2 (15-ounce) cans Great Northern beans, rinsed and drained 1 (15-ounce)can garbanzo beans, rinsed and drained 4 cups vegetable broth 1 teaspoon chili powder 1 teaspoon ground cumin 1/2 teaspoon dried oregano 1 (4-ounce) can diced green chiles, drained 1 (14-ounce) can white sweet corn, drained or 1 cup frozen corn Coat a large pot with nonstick cooking spray, then sauté the onion and garlic over medium heat for 3-5 minutes, until tender. Stir frequently so vegetables don't stick. Empty one can of the Great Northern beans into a food processoror blender and process with one cup of the vegetable broth until smooth. Add everything to the pot: the pureed bean mixture, the second can of Great Northern beans,the garbanzo beans, the remaining 3 cups of vegetable broth, chili powder, cumin, oregano, green chiles, and corn. Bring to a boil, then reduce heat and cook for 20 minutes. Garnish with a dollop of tomato salsa or sour cream or both! Thank you Viv! You are so very kind and caring The power in part of Houston has been knocked out and I am just 2 hours away from the city. I came to Victoria to be with a friend because his sister and a hospice father need care! This is supposed to be a temporary thing --- but I got caught by Ike-get a hike! Remove the chorizo with a slotted spoon and drain on paper towels. Saute the onion, garlic, bell pepper and throw in the bay leaf cooking until the vegetables are very soft and almost dissolved. Stir in the jasmine rice. Add the tomatoes and broth, season with salt and pepper. Put back the chorizo in the vegetable mixture, boil, and simmer for 5 minutes. Transfer the mixture in a baking dish adding pimento, sweet paprika and cook for 20 minutes until the rice is tender and has absorbed the liquid. Sprinkle the olives on top of the rice before serving.

Wow Nellie, I'm so happy going veggie helped you so much!. It's a very healthy lifestyle. I've been veggie since a kid because I couldn't eat dead animals...I loved animals! I have never had any health problems You really get used to it and after awhile don't even think about meat Thanks for posting

Happy Maccas Meatless Monday Here for Paul is a very easy and delicious dish: Fast chile rellenos: Drain canned whole green chilies. Make a slit in each and insert a piece of cheese. Dredge in flour and fry in a skillet, slit side up, until cheese melts. These would be great with Nellies Veggie Chorizos and Rice posted above! Some sangria would be good with this too

It's been about two, two and a half months since I've become veggie, and I'm pleasantly surprised that I'm not missing meat as much as I was worried I would. Maybe I miss the taste of bacon a little, but not really. What I was wondering is that I really love Chinese food and used to like General Tao's chicken before I became vegetarian. Does anyone know a good recipe for like a fake General Taos? I'm really anxious to try some of the recipes on here. The only thing I find really hard is that there are not really any stores that cater to vegetarians here, except for my supermarket across the street, which has quite surprisingly a fair number of products; but their veggie burgers are horrible! I have had a couple of really good ones at restaurants; but I just can't seem to find a good one to make at home!

Well, on one of my favorite vegetarian recipe sites, there is an extremely popular recipe for General Tao's Tofu. I believe it's the top rated recipe on the site. Here's a link to it: http://vegweb.com/index.php?topic=8769.0 I haven't tried it though, but the website it's posted on is a good website for recipes. The recipe calls for an egg substitute. If you are cutting out eggs, you can use a tablespoon or two of any type of bean flour (soybean, chickpea/garbanzo etc) dissolved in water for a recipe like this. As for buying vegetarian food....a big mistake (and I'm not accusing you of it, but I want to mention it) that most new vegetarians make is that they expect they will have to live off of veggie burgers and tofu for the rest of their lives. If their food doesn't come frozen or in a little spice and rice packet with the word "VEGETARIAN" emblazened on the package, they won't buy it. Now, you can do this, but it's a bit problematic. For one, it's expensive and two it's just not the same nor as nutritious as a nice home cooked meal of nourishing vegetables and grains. Most vegetarian food can be bought in regular supermarkets if you know what to look for. Dry and/or canned beans and peas, fruits and veggies, rice, pasta, spices and condiments are things you can usually easily find in a supermarket. The best way to find out what you need is to get a practical cook book (or list of recipes online) and find some dishes you like. If you want to make these dishes frequently then you will know to keep those ingredients on hand. Also try foreign cuisine. There are a lot of vegetarian recipes in Indian cuisine, Mexican, Greek, Italian etc. etc. etc. Experiment and your taste buds and body will be happy. Happy meatless eating! Being a vegetarian is really quite easy. P.S. if you like veggie burgers, you can easily make your own with veggies, beans and grains. Look up recipes online, there are tons.

Tofu General Tso's Serves 3-4 Ingredients: 1 (16 ounce) container extra firm tofu 2 eggs, beaten (or egg replacer to make it Vegan) 5 teaspoons cornstarch, for sauce 1/2 cup cornstarch, for breading 5 tablespoons rice vinegar 6 1/2 tablespoons rice wine 1/2 cup sugar 1/2 cup soy sauce 3 tablespoons minced garlic 1 tablespoon minced ginger 2 tablespoons sesame oil 1/2 cup oil (for frying) chili oil Directions: 1. Take tofu out of liquid it came in and chop into 1 inch cubes, press these between two towels to take out the moisture and dry them. 2. Mix rice vinegar, rice wine, soy sauce, garlic, ginger, 2 Tbsp Sesame oil, and chili oil to taste. Add to this the cubes of tofu, cover and let marinate in refrigerator at least 4 hours, preferably over night. 3. Next, remove the tofu from the marinade. Try to remove as much outer moisture from them as you can. Set them aside. 4Take the marinade and add to it the 5 tsp Cornstarch and 1/2 cup sugar. Then whisk it together. 5. In a large sauce pan bring the marinade (now General Tso's Sauce) to boiling over medium low heat. It should be thick when done. Then remove from heat. 6. Beat two eggs, and immerse the tofu in them, covering all sides with egg. Then remove the tofu and place it on a paper towel. Then toss the tofu in the 1/2 cup cornstarch to lightly cover each side. Shake off the excess. 7. Heat 1/2 cup oil in a large frying pan over medium heat. Then place in the tofu, turn it during cooking so that each side gets browned. 8. When all sides are browned, place the tofu on a paper towel to get rid of excess oil. Then add the tofu into the sauce and heat over low for 3-5 minutes until everything is heated through. 9. Thank you so much for your wonderful suggestions. I will definitely check out the website. Yes, I AM worried about not eating properly, because I have a tendancy to become anemic. I went out and bought brown beans, and spinach and molasses! Just want to be sure! But I don't know if there are any other nutrients I should be worried about. I am stil eating eggs and dairy products; dairy I'm a little more careful about, as I am also lactose intolerant. I can tolerate cheese, to a degree.

Hi 2: Thanks for the terrific posts I have been crazy busy and traveling a bit so I need to make it up with a really delish recipe...and here it is....drum roll VEGAN MILANOS (yes these are the vegan version of pepperidge farm milanos!...and they are great!) 1/3 cup rice milk (or soy, whatever you got) 3/4 cup sugar 1/2 cup canola oil 2 teaspoons pure vanilla extract Scant 1 teaspoon finely grated orange zest 2 cups flour 2 tablespoons cornstarch 1 teaspoon baking powder 1/4 teaspoon salt 6 ounces bittersweet or semisweet chocolate, chopped (or use chocolate chips) Preheat oven to 350 F. Grease 2 large cookie sheets. In a large mixing bowl, use a strong fork to mix together milk, sugar, oil, vanilla and zest. Add half of the flour, along with the cornstarch, baking powder and salt; mix well. Add the remaining flour and mix until you have a soft, pliable dough. Make sure your hands are very clean and dry, and dust them with flour. Stuffs about to get messy. Sort of. Grab about 1 tablespoon?s worth of dough and roll it into a ball, and then roll into a log that?s about 1 1/2 inches long. Flatten with the palms of your hand to create an oval that is 2 inches long and 1 inch across, then straighten the edges out with your fingers. Basically, if you know what a milano looks like, that?s the shape your going for. But this is homemade, so don?t try to be perfect. You aren?t a machine (or are you?) Continue with the rest of the dough, flouring your hands before you form each cookie, until you have 16 cookies placed about 1 inch apart (they don?t spread much. . Bake for 14 to 16 minutes, until tops are firm and edges are ever so slightly browned. Remove from oven and let rest for 2 minutes. Use a thin, flexible spatula to transfer to a cooling rack. Meanwhile, bake your next batch and melt your chocolate*. Once cookies are cool enough to handle (only about 10 minutes), take a cookie and dip the bottom into the chocolate. Then take another cookie and dip it, and place the dipped sides together to form a sandwich. Don?t press them hard lest the chocolate smush out. Place them on a tray or several plates that will fit in your fridge. Continue with the remaining cookies until you have 16 sandwiches. Have a wet rag at the ready to wipe your fingers between putting the cookies together, to avoid chocolate fingerprints on the cookies. Or just lick the chocolate off. Or just decide that who cares about chocolate fingerprints. Place cookies in the fridge to set for at least an hour. Bring back to room temperature before serving (about 1/2 an hour.) *You know how to melt chocolate, right? (double boiler or nuke) I'm not vegan but these are really good and worth the time

Hi Dawn Congrats on going veggie. It's really one of the best things you can do for yourself and the world and of course the animals Starshine and Nellie have some great recipes for you and here is another.. GENERAL TAO'S TOFU 1 container of firm tofu, drained and pressed. I prefer just 'firm', but really you can use whatever you want/have. 3/4 cup cornstarch peanut or vegetable oil for frying 3 chopped green onions (optional) 1 Tablespoon (or less-I used less and it worked great) minced ginger 3 cloves minced garlic (love it) 2/3 cup vegetable stock 2 Tablespoons soy sauce 4 Tablespoons sugar (I used dark agave nectar) red pepper to taste 1 Tablespoon sherry (optional) 1 Tablespoon white vinegar (or rice vinegar) 1/2 Tablespoon hoisin sauce (I added this to cut the sour) veggies Drain, dry and cut tofu into 1 inch chunks. Roll each piece of tofu in a bowl of cornstarch. If your tofu can handle it with firmness, shake all the tofu in the cornstarch bowl - if you think this will break your fu - just do it individually. -Heat your oil in a heavy-bottomed pan or wok and fry tofu pieces on each side until golden. Drain oil. This will take about 4-6 minutes on medium high heat. Remove tofu from pan, place on paper towels. -Heat 3 Tablespoons of oil in the pan or wok on medium heat. Add green onions, ginger and garlic, cook for about 2 minutes. I also added one sliced carrot at this point, and a few chopped green beans. Be careful not to burn garlic. -In a small bowl or measuring cup, whisk together the vegetable stock, soy sauce, sugar, red pepper, hoisin sauce and vinegar. Add to wok. -Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well (I whisked in about 1.5 tablespoons cornstarch). -Add fried tofu and coat evenly. -Serve immediately with steamed broccoli over your choice of rice. Serves: 4 Enjoy
