Oh, I'm so glad that I found this thread. I've tried a few times in the past to become a vegetarian and I always end up giving up, but this time it has been two months and my resolve is really holding up. I feel very alone in this as I don't know any other vegetarians, and I really want to stick to it this time. I must try these recipes, they sound delicious.

Happy Maccas Meatless Monday 2: hope everybody had a great weekend Today I'm posting a main dish salad, it is easy, healthy, economical and delicious! PANZANELLA (serves 2) also called bread salad! 1/4 cup extra virgin olive oil 3-4 tablespoons balsamic vinegar 2 garlic cloves, minced Salt and freshly ground black pepper 2 cups or a little more 1/2-inch cubes crusty Italian bread, toasted (cut a crusty 1/2 loaf of bread into cubes and toast in oven for about 10 minutes ) 1 pound vine ripened red tomatoes, cut into wedges or cubed 1 can (15 ounce) white canellini beans, drained and rinsed 1/4 cup Nicoise or Kalamata olives, pitted 1/4 cup packed fresh basil leaves, washed well, dried, and chopped In a bowl, whisk together oil, vinegar, garlic, salt and pepper to taste. Toss the dressing with remaining ingredients, season with salt and pepper to taste and toss to combine. Let salad stand at room temperature 15 minutes. If not using immediately, cover and refrigerate Enjoy

Thanks, it's definitely hard at the beginning, but everytime I falter I think about a recent news clip where they showed a herd of cattle waiting to be brought to slaughter, and it just broke my heart to think of where they would soon end up!

My favourite thing I"ve discovered since becoming a vege is falafel also Oh Natural products are really good I"ve found even hardcore meat eaters like them so if you have compony it's good they also enjoyed this Falafel Prep Time: 15 minutes Cook Time: 1 hours, 45 minutes Ingredients: 1 cup dried chickpeas or 16 oz. can of chickpeas or garbanzo beans. 1 large onion, chopped 2 cloves of garlic, chopped 3 tablespoons of fresh parsley, chopped 1 teaspoon coriander 1 teaspoon cumin 2 tablespoons flour Salt Pepper Oil for frying Preparation: Place dried chickpeas in a bowl, covering with cold water. Allow to soak overnight. Omit this step if using canned beans. Drain chickpeas, and place in pan with fresh water, and bring to a boil. Allow to boil for 5 minutes, then let simmer on low for about an hour. Drain and allow to cool for 15 minutes. Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour. Mash chickpeas, ensuring to mix ingredients together. You can also combine ingredients in a food processor. You want the result to be a thick paste. Form the mixture into small balls, about the size of a ping pong ball. Slightly flatten. Fry in 2 inches of oil at 350 degrees until golden brown (5-7 minutes). Serve hot.

Hi Rhaya thanks for posting this great recipe Falafel is also one of my favorites and the great thing is everybody makes it a different way and it's fun to try all the recipes I'm posting a recipe for Tzatziti (cucumber yogurt dip) that goes well with your falafel TZATZITI 1 cucumber, seeded and diced 1/4 onion, diced, about 2 tablespoons 1 clove garlic, chopped 2 cups plain nonfat yogurt (greek yogurt is best here-if you have it) 1 teaspoon lemon zest 1 tablespoon lemon juice 2 teaspoons salt ground black pepper optional about 1 tablespoon finely chopped fresh mint or dill Put the cucumber, onion and garlic in the bowl of a food processor and pulse until minced. Put the yogurt into a mixing bowl. Add the cucumber mixture, the lemon zest and juice, salt and pepper and mix with a spatula until well combined. Hi 2: Happy Maccas Meatless Monday Hope everybody had a great weekend! I'm starting to write an online/university type veggie cooking column so will try(I'm going to be a little busier ) to incorporate some of those original recipes and meal plans into Pauls veggie thread as I collect some columns. Today I'm posting a very easy, fast, healthy and delicious recipe for: SUCCOTASH (serves 2-4) 1 tablespoon butter 1/2 cup chopped red pepper 2 cups frozen or fresh corn 2 cups frozen lima beans 1/4 cup water 2 tablespoons butter Salt and pepper In a saucepan, heat butter and cook red pepper until tender about 1 minute. Stir in corn, lima beans and water. Cover and bring to a simmer. Cook for 3 minutes. Stir in butter and season to taste. This makes a great complete meal with just a salad and maybe some cornbread. Enjoy

Hope you like them as much as I do FROZEN BANANAS 4 bananas, peeled and halved 1 cup milk chocolate chips 1 cup butterscotch morsels 1 cup chopped almonds (or your fav nut) 1 cup candy sprinkles 8 wooden craft sticks Insert wooden stick into each banana piece. Arrange on parchment-lined sheet pan and freeze for at least 20 minutes. Place chips and morsels into separate bowls. Microwave on medium heat until melted, about 60 seconds, stirring every 30 seconds. Remove bananas from freezer and dip by alternating between melted chocolate and butterscotch. Immediately roll them in chopped nuts or sprinkles. Freeze until frozen solid, about 1 hour. Don't blame me if you eat too many

Hi, Viv! It's 90 degrees here once in a while. Fruits are really good for me and yesterday, I pigged out some avocados, tomatoes, and mangoes! I cut them up, sprinkled with black pepper, a teaspoon ov EVOO and a little pinch of salt. Yum...it was good

2: hope everybody is safe from Gustav...looks like we have a few more storms to watch out for coming up.. Wow I'm crazy busy lately and forgot to post a recipe for Paul for Meatless Monday so here is a main dish salad that is easy and delicious. ROTINI AND BLACK BEAN SALAD note: I like to use Barilla Plus Pasta because it's perfect for veggies as it contains extra protein because it's made with legume flour 8 oz whole-wheat rotini (or any pasta) 6 tbsp balsamic vinegar 1/2 tsp minced garlic 3 tbsp extra-virgin olive oil (or grapeseed oil) 1 can (19 oz) black beans, drained and rinsed 1 cup grape or cherry tomatoes, halved 1/2 cup fresh corn kernels, blanched (or frozen corn, thawed) 1/4 cup chopped green onions, white and green parts 2 tbsp chopped fresh cilantro 1 ripe avocado Juice of 1/2 lemon salt & pepper to taste Cook pasta according to package directions until al dente. While pasta cooks, whisk together vinegar and garlic in a small bowl. Season with salt and pepper. Slowly whisk in oil until dressing thickens. Set aside. Drain pasta and rinse briefly under cold water. Drain completely. Place pasta in a large bowl; add beans, tomatoes, corn, green onions, and cilantro. Toss gently. Pour dressing over pasta mixture and toss again, gently but thoroughly. Cover and refrigerate at least 1 hour and up to 24 hours. Peel and slice avocado and toss with lemon juice; use as garnish. Serve immediately. I hope you like this
