Hi Nellie great veggie food was here there and everywhere in Liverpool. My hotel (which was great..will tell more in another thread) had on it's room service menu; Wild Mushroom Risotto/Marsala also Brie and Wild Cherry grilled panini. I travel a good bit and never have any trouble finding great veggie food. Don't even have to find veggie restaurants as most restaurants now have some great veggie selections Viv

i just wanted to share this date and its importance to me. because today i am a 2 months old vegeterian! i really wanted to do this and i love being a vegeterian! and i am so happy to go through with this, so i wanted to share my happiness with you all!!
Hi Peynir Congrats I am so happy for you I think it's definitely one of the most life affirming decisions a person can make as it is helpful in so many ways Welcome and I hope you enjoy the recipe thread. I know you live on a university campus, and that presents some challenges as it is difficult to cook for yourself. If you have some tips for others in the same situation, I hope you will post them. hi, thanks a lot! your excuse is so great, i don't know what to say so great to know there are people out there who really respects this lifestyle i enjoy reading to the recipes but as you mentioned i didn't had much chance to cook, so i followed a veggie style when i was using the places to eat on campus, it is not that easy to find veggie food in those places, but i've made it work out in some way! if i had to eat something in dorm while studying, i had more stuff like oatmeal cookies and sandwiches with cucumber, tomato and cheese; they are perfectly delicious and enough for me! hope to see you all around!

Thanks for posting this Peynir It seems many people have a hard time knowing what to eat when they first decide to eliminate meat. You have shown it is pretty simple no matter what environment one is in. Just eliminate meat etc. but make sure you add other protein; dairy, beans etc.. You don't need to shop at special stores or buy specialty foods. Peace and enjoy your new healthy lifestyle

Hi Nellie thanks for these great links and photos. I love Jamies cooking. A couple years back he was involved in a project to inprove the childrens lunches in the UK school system. To make them healthier and better tasting. Thanks again Nellie

Here is one of Linda's recipes that I love. I change it around sometimes but hers is great. SICILIAN BEAN AND POTATO SALAD Serves 6 450g new potatoes 450g green beans, steamed and cut into 1 inch lengths 200g cooked or canned haricot or cannellini beans 1 small red onion, finely chopped 100g black olives, pitted and sliced 1-2 tbsp capers Classic vinaigrette 2 tbsp freshly chopped parsley Cook the potatoes in boiling water until they are tender. Allow them to cool slightly and cut each in half. Mix the potatoes, all the beans, the red onion, black olives and capers in a bowl. Pour vinaigrette over the salad and toss. Sprinkle with parsley and serve. I usually nuke the potatoes and green beans as I think they have a better texture. Also sometimes I slice hard boiled eggs and use them instead of the beans. If you add herbes de provence into the vinaigrette, use the hard boiled eggs, and black nicoise olives this turns into that famous french dish Salad Nicoise...without the tuna Enjoy

Right now, I'm eating fried sweet potatoes (fried in olive oil) green peas, and vegetarian sausage omelet. My dessert is cataloupe-so sweet and fresh. This weekend, I'll cook Linda's Sicilian Beand and Potato Salad. Thank you for posting Cantaloupe Granita. I found this on google search. How sweet... 4 cups chopped cantaloupe 1 1/3 cups Asti Spumante (Italian sparkling wine) or water 3/4 cup sugar 2 tablespoons fresh lemon juice Preparation Purée cantaloupe in processor; transfer to large bowl. Add remaining ingredients; stir to dissolve sugar. Pour mixture into 9-inch square metal baking pan. Freeze mixture until partially set, whisking twice, about 2 hours. Freeze uncovered without whisking until completely set, at least 3 hours or overnight. Run tines of fork across surface of granita to form icy flakes. Cover with foil; freeze until ready to serve or up to 2 days. Mound granita in 6 ice-cold Martini glasses. Serve immediately.

Bring to boil, stirring until sugar dissolves. Boil 3 minutes. Stir in coffee beans; boil 2 minutes. Remove pan from heat; cover and let steep until mixture is cool, about 3 hours. Strain liquid into 13x9x2-inch glass baking dish; discard coffee beans in strainer. Add coffee liqueur to liquid in dish; stir to blend. Freeze until firm, stirring every 45 minutes, about 5 hours. (Can be prepared 3 days ahead. Cover and keep frozen.) Before serving, scrape surface of granita with fork until crystals form. Using ice cream scoop, scoop out granita and serve. Enjoy and have a great summer

What a great recipe Coffee liqueur is interesting. Summer The temperature yesterday was a killer. Well, I never realized that it was really hot! I found out that my herbs almost died from the heat. I put them all on the windowpane in my room. I have rosemary, lemon thyme, and valentino basil. Italian parsley too, but I will try to water them and save my poor herbs.

Divide the fruit puree among 6 or 8 (5-ounce) paper cups. (Alternatively, the mixture may be frozen in ice cube trays or in icepop molds, if available.) Stand 1 ice-cream stick or plastic spoon in the center of each cup. Cut 6 pieces of aluminum foil about 4-inches square. Poke a small hole in the center of each foil square and place 1 square over each cup, pushing the stick or spoon handle through the hole to hold it in a straight upright position. Stand the cups in the freezer and freeze until set, at least 8 hours or overnight. Remove the pops from the freezer and discard the foil squares. Gently tear the paper cups away from the fruit pops and eat YUMMY
