Hi Nellie I love the shephards pie recipe it looks like a great company dish. I use alot of mushrooms especially the bellas as they really have a beefy taste. Do you use cheddar cheese on this for the celtic taste? I will try this soon but I might add a little wine to deglaze the shrooms....what do you think? I love the celtic cuisine but I see you are from Texas I'll bet you have some great Tex-Mex recipes up your sleeve Peace

Hey... I forgot to write it down. Yeah, I pour some white wine on it and I always cook with wine I use red too and I have a good recipe for that with lots of mushrooms, leeks, garlic, olive oil etc. For special request I did put some light low-moisture-part skim Mozzarella. Next time, I will use Cheddar. Ha ha Tex-Mex coming up!

Vegetarian Fajitas Marinade: 1/8 cup red wine vinegar 4 tablespoon olive oil thyme and sage 2 tablesppon fresh or dried oregano 1 tablespoon fajita magic seasoning pinch of cumin seeds garlic salt and pepper pinch of sugar 2tablespoon peanut oil 4 whole cloves garlic 2 scallion cut into halves Other Ingredients: chopped garlic 4 portobello sliced mushrooms 1 medium sliced red onion 3 whole yellow and red bell pepper cut into strips In a large bowl, combine all ingredients together Heat oil in a pan, sautee scallion and then garlic until slightly brown. Set aside the scallion and garlic. Caramelize sliced onions and add mushrooms until it become soft. Add the yellow and red bell pepper. Lastly, toss the minced garlic and scallions. Extras: medium chopped iceberg lettuce head 1 vegetarian refried beans flour or corn tortillas 1 medium tomatoes chopped Serve the fajita ingredients with lettuce, tomatoes, and guacamole. Add sour cream and refried beans if desired. Serve with warm tortilla. --- Choose your own favorite hot sauce. -----I'm famish---- Peace and Love Enjoy eating...

Spanish Rice To Go... More to come with Tex-Mex easy cooking. ------I'm back! ---- Spanish Rice (and Fajitas are yummy). 2 servings: 3 tbs. olive oil 1 medium chopped onion 1 red bell pepper chopped 1 cup chopped celery 1 cup green peas. 2 cups spanish rice or texmati scented rice 3 small fresh tomatoes Saffron Cook rice in a rice cooker for 15 minutes and make sure it's fluffy and not sticky. In a sauce pan, sautee garlic, onion, celery, green peas and red bell pepper in olive oil. Add fluffy cooked spanish or texmati rice and sprinkled saffron stirring occassionally. Add salt and pepper to taste. Serve hot!

Broccoli-Tofu Cheese Enchiladas Recipe Ingredients Filling: 1 tablespoon olive oil 1 large onion, coarsely chopped 4 cups coarsely chopped broccoli 1- 14-ounce tofu 2 ounces cream cheese 2 garlic cloves chopped 1 teaspoons chili powder 1 teaspoon salt Enchiladas: 6 corn tortillas 2 enchilada sauce 4 ounces grated Cheddar Cheese Preheat oven to 400F. Heat oil in a large skillet. Sautee onion and broccoli for 4 minutes. Place half the tofu in a food processor and coarsely crumble the other half into a bowl. In the food processor, add cheese, garlic, broccoli mixture, light chili powder and salt. Pulse until smooth. Add onion, broccoli mixture, and pulse a few more times until coarsely chopped. Then combine mixture with crumbled tofu. Stir well. Spray a 13-by-9-inch baking dish with cooking spray. Place about 1/6 of filling down middle of each tortilla roll up and place seam side down in baking dish. Pour enchilada sauce over top. Bake 15 to 20 minutes. Remove from oven and sprinkle with cheese. Increase temperature to 450F degrees and bake 5 to 10 minutes more or until cheese is melted Yummy! Borrowed recipe.

You're welcome! Wowie! Cuban food. What is your favorite Cuban food? It's quite interesting. I have recipes for traditional Spanish cuisine (from Spain) and I love it very much. Paella is my # 1 faves. You are right! If you put corn in your Spanish rice, you almost have a perfect nutritious diet. Yummy!

Hi Nellie yes I love Spanish food and I do quite a bit of Spanish cooking but, as their cuisine is mainly built on meat sometimes I think we have to be inventive. One of my fav Spanish and Cuban foods would be saffron rice which I make often and even like to use in salads. I also love their desserts like flan brazo de gitano and arroz con leche I found a vegetarian recipe for Paella for you which looks pretty good and easy. I don't tend to use fake meat very often but I think I will try this: VEGETARIAN PAELLA 2 teaspoons olive oil 8 ounces soy sausage, cut into 1-inch pieces 2 cloves garlic, minced 1 cup marinated artichoke hearts, quartered 1 cup sliced yellow squash 1 cup baby squash or sliced zucchini 1 cup sliced carrots 1 bunch asparagus, ends trimmed, cut into 2-inch pieces 1/2 cup frozen green peas 14-ounce can diced tomatoes 6 to 8 saffron threads 1/2 teaspoon paprika 2 bay leaves 2 cups cooked rice 1/2 cup reduced-sodium vegetable broth 1/4 cup chopped fresh parsley leaves Salt and freshly ground black pepper Heat oil in a large paella pan or skillet over medium-high heat. Add soy sausage and garlic and cook 2 minutes. Add artichokes, squash, zucchini, carrots, asparagus, peas, tomatoes, saffron, paprika, and bay leaves, bring to a simmer and cook 5 minutes. Add rice and broth and cook for 5 minutes, until liquid is absorbed. Remove from heat, remove bay leaves and stir in parsley. Season, to taste, with salt and black pepper this is from the food network..I hope I don't get in trouble ps there is a recipe for black beans and rice salad further up in the thread which I think would be delish with saffron rice and maybe add some roasted red pepper yum .

I agree with Amanda your carrot cake recipe is awesome To me, cooking is relaxing, fun and creative and I love to cook for people for me it shows love. There is a novel(and film) I love called "Like Water For Chocolate" by Mexican author Laura Esqiuval. It tells the story of a women who used her cooking skills to show her love. The book is one of my favs I can't believe I haven't posted a tofu recipe, so here goes, one of my favorite tofu recipes: MOCK STROGANOFF 1 lb of tofu (firm) cut into about 1/2 inch cubes Marinade: 1/2 cup soy sauce (I like tamari) 1 teaspoon fresh garlic, minced about 1/4 teaspoon (ground) each of: dry mustard, cumin, coriander and pepper--if you don't have all of these just use what you have pinch of cayenne pepper (optional) water Stroganoff Ingredients: 1 medium onion, chopped 4 cups of mushrooms, sliced 1/2 teaspoon basil (optional) 1 sprig of fresh rosemary (if available) 1/4 teaspoon nutmeg 3/4 cup white wine 1/2 cup yogurt 1/2 cup sour cream Place the tofu and the other marinade ingredients in a zip-lock bag with enough water to cover tofu and squeese out the air. Place bag in refrigerator for 2-24 hours. Saute the onion in butter or olive oil. Add the tofu(with marinade) and mushrooms and stir over medium -low heat. Add the basil, rosemary and nutmeg. Cover and cook for about 10 minutes over low heat. Add the wine, yogurt and sour cream and stir gently until thoroughly warmed. Be careful when you season this as the soy sauce is very salty so should not need extra salt. Serve over noodles (I like green (spinach) noodles for this) Serves about 6 Enjoy

Easy Fixin' Veges bean burrito cilantro lettuce tomatoes yellow onions, beans garlic olive oil sliced avocado salt and pepper to taste. folded in thin tortilla wrapper (extra virgin olive oil) Mike had a giant piece.

It is very easy and so delish you can't stop eating them PARMESAN TATERS 5 cups frozen tater tots 1/4 cup olive oil Salt and freshly ground black pepper 1 1/2 tablespoons crushed garlic (or less) 3 tablespoons chopped flat-leaf parsley 1/2 cup grated Parmesan Preheat the oven to 400 degrees F. Combine the tater tots and the olive oil in a bowl. Toss to coat, spread on a baking sheet and bake until golden brown and crisp, about 30 minutes. Remove the tater tots from the oven, season with salt and pepper and transfer to a mixing bowl. To the taters, add the garlic, parsley and cheese. Toss to combine and serve immediately. Diced or Whole RO*TEL Tomatoes & Green Chilies Directions: In a saucepan, combine ingredients; stir over low heat until cheese spread is melted. Serve with tortilla chips, crackers, or vegetables. Microwave: Place ingredients in a covered casserole. Microwave on HIGH until cheese spread is melted, about 5 minutes, stirring once.
