Hi Beatlemaniac Hi Nellie glad you like the recipe! Yes, veggie cooking is very healthy and great for weight control as there is usually less fat. Cinco de Mayo is coming up and I am looking for mexican recipes. Here is one I like but would love for you all to post some more. I don't know if Mexico and the US are the only countries to celebrate Cinco de Mayo...does anyone out there know? This recipe is very easy and great for a party serves 4-5 or make 2 to serve 8-10 THREE BEAN MEXICAN LASAGNA (preheat oven to 425 degrees) 3 tablespoons olive oil 1/2 large onion (chopped) 1 can black beans (drained) 1 can red or kidney beans (drained) 1 can veggie refried beans 2 tablespoons chili powder 2 teaspoons cumin 1 and 1/2 cups frozen corn kernels 1 cup salsa or taco sauce or rotel tomatoes (what ever you like) salt & pepper if needed 8 (8-9 inch) flour tortillas 2 and 1/2 cups shredded cheddar or jack or mex-blend cheese saute onion in 2 tablespoons of the oil until soft. Add all other ingredients except for tortillas and cheese, season and heat together about 5 minutes. Spread 1 tablespoon olive oil to coat a shallow baking dish or pie pan. Cut tortillas into halves or quarters to make them easy to layer with. Then place 1/2 of bean mixture into bottom of pan, then layer half of tortilla pieces to cover and half of cheese on top of tortilla pieces, repeat with bean mixture, tortillas and cheese. Place in preheated oven and bake for about 15 minutes until lasagna is heated through and cheese is melted and browned on top. Remove from oven and let sit for about 5-10 minutes to set as it will cut easier and hold together better. This is great with a tomato, avocado chunk salad and LOTS of Corona Enjoy

Happy Cinco De Mayo Everybody It doesn't get much easier than this: CHEESE AND CORN QUESADILLAS (serves 4 or more) eight 7- to 8-inch or four 10-inch flour tortillas 3 tablespoons unsalted butter, melted 2 cups grated Monterey Jack (about 1/2 pound)or cheddar or Mex-blend 1 cup frozen corn (thawed or fresh kernels) 2 fresh or pickled jalapeño chilies, or to taste, seeded and minced (wear rubber gloves) guacamole and/or tomato salsa as accompaniments Arrange half the tortillas in one layer on a large baking sheet and brush them lightly with some of the butter. Turn the tortillas over, divide the Monterey Jack, the corn, and the chilies evenly among them, and top the mixture with the remaining tortillas. Brush the tops lightly with some of the remaining butter and broil the quesadillas under a preheated broiler about 2 inches from the heat for 1 minute, or until the tops are golden and crisp. Turn the quesadillas carefully with a spatula, brush the tops lightly with the remaining butter, and broil the quesadillas for 1 minute more, or until the tops are golden and crisp. Serve the quesadillas, cut into wedges, with the guacamole and/or the salsa. This is great just with Mexican beer (which I love) or would be great to accompany the 3 bean chili recipe posted way back in this thread Have a great time....

Hello ((((JOANNE)))) How are you girl? I had bad cholesterol and my doc warned me to live a healthy life. Well, I do not smoke, I drink wine rarely and boy I just love to eat everything -there was no limit at all. Then, I decided to try vegetarian food and it worked for me greatly! You scared me! I will show you my fat pic and the slimmer me. Say, potatoes has plenty of potassium and protein, carrots, greens have loads of vitamins, and not to mention I eat almost all the fresh fruits in the market. So, eeekkkk I learned the hard way, eh! My friends had sirloin rare last night and I wonder... ah, it will cause aneursym in their aorta. Thank you dude!

MustangSally this is good, quick, and easy. INGREDIENTS: 2 ripe avocado juice of 1 lime 1/4 cup onion finely chopped 1/2 teaspoon cumin 1/2 teaspoon chili powder 1 clove of garlic, peeled and finely chopped 1 tomato, seeded and diced 1 cup shredded lettuce (optional for garnish) 1/4 cup shredded cheese (optional for garnish) PREPARATION: With a fork or a food processor, mash together the avocado and lime juice. Fold in the remaining ingredients. Spread out the lettuce on a plate. Scoop the guacamole into the center and top with shredded cheese.

Now I feel guilty to post this recipe because it isn't that healthy but it sure is delish and easy and very traditional and a great way for new veggies to have a traditional meal while avoiding meat...here tis: MAC AND CHEESE 1 pound elbow macaroni 2 tablespoons butter 2 tablespoons flour 2 cups milk Salt and pepper, to taste 2 cups plus 1/2 cup shredded sharp Cheddar Cook the macaroni in boiling water for about 10 minutes until tender but still firm. Drain well and set aside. In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth. Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart buttered casserole dish. Bake in a preheated 350-degree F oven for 20 minutes. Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly. Very Yummy

Thank you for posting MSally10. I am going to cook it tonight for 2 people. I just need cheddar cheese- yummy! I'm drooling... Here's Nellie's salad -I love it so much. Would you believe I ate it all by myself? The ranch dressing is sooo good. The fruits are so sweet and a half glass of red wine made it all so appetizing and wonderful. Head of lettuce Tomatoes Lemon Black pepper No salt Lighthouse Organic ranch dressing (very good dressing). Hehehe...I'm hungry! ops:

Ayayay!!! Smell The Irish Soda Bread MustangSally10 for ya! Beatlemaniac and To all Irish Ingredients: 1lb Plain Stone-ground wholemeal flour 1 teaspoon Bicarb of Soda 3 teaspoons Baking Powder 1 teaspoon Salt (optional) Handful Brazil Nuts & handful Hazelnuts - crushed (optional - not traditional) 250ml Buttermilk and a little extra to form dough Flatten the dough onto a flat floured baking sheet and make deep cross (practically down to the tray). Sprinkle with flour & cook in a pre-heated oven (180 degrees) for 40 mins. Stand to cool on a rack. Cut in half and slice from middle. Serve with butter and cheese for best results! Enjoy!
