Hi Everyone thanks for the recipes...I love the cheesey Rotel recipe and have used it many times. I like it with the hottest rotel tomatoes but be careful because the hottest are very HOT muy caliente Since you'all are liking some easy recipes. here is another for Bean Dip..just drain and rinse 1 can black bean (just the plain black beans with salt not the ones with the seasoned sauce) add 1 cup of your fav salsa and mix...that's it. You can use it as a dip with corn chips or heat and use in a burrito or wrap with tomatoe, avocado,onion, lettuce, shredded cheese or sour cream( any or all of these) Yum-O I've been out of town all week and it's a cool and grey day here so I'm going to relax by trying this recipe: CREAMY CORN & VEGETABLE SOUP 4 cups fresh corn kernels or 2 (10-ounce) packages frozen, thawed (I'm using frozen) 2 cups nonfat milk (or whole milk it doesn't matter) 1 tablespoon olive oil 1 large onion, diced (about 2 cups) 1 medium red bell pepper, seeded and diced (about 1 cup) 1 medium zucchini, (about 1/2 pound) diced 2 cups vegetable broth 2 plum tomatoes, seeded and diced 3/4 teaspoon salt Freshly ground black pepper 1/2 cup fresh basil leaves, cut into ribbons Put 2 cups of the corn and the milk into a blender or food processor, until smooth. Set aside. (This step is optional but I like it as it makes the soup creamy) Heat the oil in a large soup pot over a medium-high heat. Add the onion, bell pepper, and zucchini and cook, stirring until the vegetables are tender, about 5 minutes. Add the remaining 2 cups of corn and the broth and bring to a boil. Add the pureed corn and tomatoes and cook until warmed through, but not boiling. Add the salt and season with pepper. Serve garnished with the basil ribbons. Enjoy

I also have my recipe for pita sandwich Humus (made of garbanzo beans) Olive oil Bell peppers Caramelized onions Two light fried garlic Cooked carrots, beets Fresh sliced cucumber Toast pita bread lightly and mix the ingredients all together. It?s yummy and quite filling

Hi Nellie thanks for the recipes I love garbanzo beans (chick peas) so am sending you this one in return ....Enjoy CHICK PEA SALAD WITH COUSCOUS 1 box flavored couscous (garlic or Parmesan or plain), cooked (you can find this in the rice section of the supermarket just bring H2O or veg broth to a boil and add couscous( which is a kind of pasta) to boiling liquid take off heat & let sit for 5 minutes...Done ) 1 can chick peas (garbanzos) drained & rinsed 1 red bell pepper, finely chopped 1/2 sweet onion, chopped 1 small cucumber, peeled, and chopped 1 tomato, chopped 1/4 cup fresh parsley leaves, chopped 1/2 cup crumbled feta cheese Salt and freshly ground black pepper 1/4 cup olive oil 2 limes, juiced ( or about 1/4 cup vinegar..wine or white) salt & pepper to taste just mix cooked couscous with the rest of ingredients...it's a one dish meal and takes about 5 minutes Peace

Hi Amanda here is another idea for veggie lasagna that I make when I am in a real hurry and it's delish..... 1 package frozen ( not thawed) cheese ravioli 1 jar tomato sauce..whatever kind you like shredded mozzarella cheese (however much you like) shredded parmesan cheese put a little tomato sauce in bottom of baking dish...then layer rest of ingredients as you like and finish with parmesan cheese bake @ about 350 degrees until top is slightly browned and all ingredients are hot ...about 45 minutes this has all the same ingredients as lasagna and tastes the same Take care

You can cook Japanese, Chinese, Filipino, and Tawainese out of these ingredients. Thai use hot spicy ingredients so I am not very fond of it. BRB
