Hey Sally! ....I'm so glad the crust turned out well for you. YES, resting the dough overnight is a great tip, isn't it?? You did refrigerate it? I like to put it in a plastic bag. The dough is soo much easier to work with the next day as I'm sure you realized. Geez, it came out great for you the first time?????? You must really be a good cook and each time you do it, it will get better and better as you experiment with the texture of the dough. It's sooo much fun isn't it?? 2: Hello out there Hi Claudia I did rest the dough in the fridge overnight in a plastic bag. In fact I have made it a couple of times since then! I am becoming a real fool for pizza I guess there are worse things I'm trying to experiment with some vegan 'cheeses' on the pizzas...still trying to find the perfect one. If any out there have some vegan 'cheese' products you like please let me know. It's so much easier to work with the next day isn't it? Anyway, I hear ya ....it's so addicting . Once you try one pizza you want to just keeping experimenting with different toppings. It's virtually endless. I don't know...pizza is just so satisfying it's got everything and I love the crunch of the crust. Have you ever bought the roma tomatoes...slice them and spread them in a roasting pan with some chopped garlic, olive oil, salt and pepper. Roast them at a low temp. of 200 for about an hour. You won't believe how incredibly sweet and delicious they become. Oh, I didn't ask you...do you roll out the dough or do you hand stretch it? Talk to you later Claudia

Add salt and pepper to taste. Serve, or cover and chill up to 1 day Enjoy

Here is a bonus fun recipe from Meatless Monday. Great on fries, onion rings or veggie burgers! MOLASSAS NUTMEG KETCHUP Impress your guests! 1 1/4 cups tomato paste (12 oz can) 1 1/4 cups water 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1/8 teaspoon clove 1/4 teaspoon mace 1/2 teaspoon salt 1/4 teaspoon fresh ground pepper 1 bay leaf 1 garlic clove, crushed 1/3 cup cider vinegar 1 teaspoon molasses 1 tablespoon honey 1 teaspoon dark soya sauce 1/4 teaspoon dry mustard 1. Combine ingredients in a saucepan and simmer together for about 40 minutes or until ketchup reaches desired thickness. 2. Taste and adjust seasonings. Refrigerate for at least an hour to allow flavours to blend. 3. Makes 2 cups and can be frozen. Enjoy!

Here is a recipe someone posted in the comments for one of the Meatless Monday columns above....very easy and fast I tried and it's really good! She used one can of veggie broth. One can, drained and rinsed, black beans. One can of vegie refried beans. 1/2 cup frozen or canned corn 1/2 cup each frozen chopped onions and green peppers. (They soften quicker). (I didn't use frozen but sauted some onion and g pepper then added all the other ingredients) One small jar salsa. (Your choice on heat.) She stirred them together until the refried beans had incorporated and then added one cup of shredded cheese. She let it simmer while the cheese melted. She served it with olives and sour cream to top it along with chopped avocados and tomatoes and tortillas.

Here is a lentil recipe from the first page of this thread It's really easy, economical and healthy! MY LENTIL SOUP 1 large onion, chopped 1 red pepper, chopped 4 Tablespoons of olive oil 2 Tablespoons of flour 4 large carrots, sliced or chopped 1 Tablespoon of salt (if you use veg. broth might want to omit or use less salt) 1 lb. lentils 8 cups of water (I use veg. broth,which I like, but H2O is fine) 2 tomatoes chopped, or a 1 lb. can cook onion, red pepper in oil till golden. Stir in flour & cook until bubbling,don't brown. Add all other ingredients. Cook covered over low heat for 1 or 2 hours, stirring occasionally Peace and Love

I was in the market the other day buying some dried beans when I picked up a package of green split peas. Its' been ages since I've even thought of them and when I read the nutritional info it said 11 grams of protein for every 1/4 cup (dried) so then I read the info. for regular brown lentils and it said 9 grams of protein for every 1/4 cup (dried) WOW more protein than regular lentils I brought them home and made this soup, which was easy, fast, cheap and turned out delish 1 tablespoon extra virgin olive oil 2 large onions, chopped 1/2 teaspoon fine-grain sea salt (or any salt) 2 cups dried split green peas, picked over and rinsed 5 cups water or more if needed ( can use veg. broth, if so omit salt) juice of 1/2 lemon (reserve the zest) (optional) a few pinches of smoked paprika (optional) more olive oil to drizzle Add olive oil to a big pot over med-high heat. Stir in onions and salt and cook until the onions soften, just a minute or two. Add the split peas and water. Bring to a boil, dial down the heat, and simmer for 20 minutes, or until the peas are cooked through (but still a touch al dente). With a potatoe masher, mash the soup to the consistency you like. Taste and add more salt if you choose. Ladle into bowls or cups, and serve each drizzled with olive oil and topped with a good pinch of smoked paprika and a touch of lemon zest. Serves 4 to 6. Really good with some garlic bread or pumpernickel croutons A new source of protein for me...Yeah!...should be great for the winter Does anyone have any other recipes for dried green split peas? I don't often feel moved to chip in with recipes but I learnt something recently that I so much wish I'd known 20 years ago and feel it my duty to pass this along. The mystery that has bugged me my whole life has simply been coating batter - as used in non-vegetarian dishes such as battered fish and chips, battered suasages, but equally vegetarian options such as battered mushrooms or other vegetables and sweet dishes such as fruit fritters - apple, banana and pineapple. My search for the ideal coating batter has led me to recipes with eggs, beer, milk the combinations are numerous, but equally disappointing. Idly watching Daytime TV cooking programmes I have seen TV chefs showing a quick batter using bottled soda water and flour - fine, but welcome to my non-bottled soda water world - and I'm not going shopping for the sake of coating batter. Well I finally found my holy grail, I looked for Delia Smith's take on this and her web-site carried the message "Delia doesn't fry in batter these days...... but if she did she'd recommend....." Self raising flour - pinch of salt and water - that it! Just to clarify the flour as I know US and UK recipes use different languages, self raising flour is the one prepared with baking powder and salt used for recipes that rise such as cakes and scones. Simply place a quantity of self-raising flour you estimate will suffice to coat your item/s add a pinch of salt and add water in small amounts until it beats to a consistancy suitable for coating. Take your items - say in my case apple rings, dust them in a bit more flour to aid adhesion of the batter and drop the item into the batter until evenly coated and then deftly transfer into the hot oil - 180 degrees centrigrade and cook until golden brown. I have found that the batter keeps well in the fridge, covered in cling film and have used it successfully a week later - it settles out into fluid and solid but beats up well again to use. I've been moved to post after satisfying a craving for something sweet by plucking a couple of fresh apples off the tree, cutting apple rings, battering them as described and drenching them in sugar. Hi Martin Welcome to the veggie thread How in the world did you know my great weakness is fried food : I saw this earlier and walked to the market...which I am so lucky is across the street and I bought some self rising flour so that I could try your recipe. It's a little late here now so will try it tomorrow. I have apples and zucchini and may also try some sweet onion rings. yum Thanks for the recipe Martin, I'll let you know how it turns out for me
