Here is a great recipe I love for summer, it's so easy and delicious and uses RUM which I love WATERMELON SALAD (serves 2) a 2-pound piece watermelon (preferably seedless) 1 lime 1 tablespoon chopped fresh cilantro leaves 1 1/2 tablespoons light rum, or to taste Remove rind and any seeds from watermelon and cut fruit into 1-inch pieces. Into a bowl finely grate zest from lime and squeeze enough juice to measure 2 teaspoons. Stir in watermelon, cilantro, and rum and toss to combine. Chill watermelon salad 15 minutes. or more Have a great summer, Cheers

Hi Nellie Now I can't feel so sorry for myself...your temps are higher then mine . I hope you enjoyed the watermelon salad. Watermelon is one of my favs and really cools you down in the hot weather. Well I am off to spend some time in Liverpool, to see Paul of course. I will try to keep up with the recipe thread while I am gone. Here is an easy and fabulous looking English dessert: ENGLISH RASBERRY SUMMER PUDDING 8 thin slices white bread Butter, softened 5 cups raspberries 1/2 to 2/3 cups sugar 1 tablespoon lemon juice 1/3 cup water Butter bread slices very lightly and line small baking dish with 4 slices. In a sauce pan combine raspberries, sugar lemon juice and water. Bring to a simmer and cook for about 10 minutes. Pour berry-mixture over bread. Layer remaining slices over berries. Place another dish on top and press down. Pour off excess liquid and reserve to serve with pudding or use for a sauce for ice cream. Cover with plastic wrap and weight with a heavy can or pot. Chill as least 6 hours before serving I use a small bowl to make this and cut the bread slices so that they fit all around the bowl. After chilling unmold on a platter and it looks as if you have been cooking all day! Cheerio!

It's 12:40 A.M and once again your recipe made me hungry. I just got back from the pantry and am eating some oreo cakester lol! Yeah, I loved it very much. Hi Nellie I forgot to add for the Summer Pudding recipe, as rasberries are expensive it is great to use blueberries or blackberries or a combo of all to make the 5 cups of fruit. When you use the combo the color of the pudding changes from red to a beautiful purple Cheerio

That's great Viv! I prefer blackberries because the last time I had fresh blueberries on my ice cream my neck swelled up. Eek! I think it had something to do with the med I was on. But it sounds good to me. YUMMY!Take care...

Hi Peynir Congrats I am so happy for you I think it's definitely one of the most life affirming decisions a person can make as it is helpful in so many ways Welcome and I hope you enjoy the recipe thread. I know you live on a university campus, and that presents some challenges as it is difficult to cook for yourself. If you have some tips for others in the same situation, I hope you will post them.
