Thanks Anita! I just bought a copy of this book based on your recommendation! I have a copy of one of Linda's cookbooks too which I think is quite good. I'm not vegetarian, but would like to include more meat-free dishes into my diet. Regards, Erik

'pan-fried cheese, tomato and onion sandwich' - page 42 'lip-smacking minestrone' - page 73 'must-have creamy tomato soup' - page 76 'corn fritters' - page 82 'winter warmer hotpot' - page 133 'mac & cheese with crispy topping' - page 137 All of the above recipes are simple and delicious! The element that I absolutely LOVE about this cookbook more so than any other veggie cookbook is that it makes it so EASY to go veggie! The recipes are quick to prepare, the ingredients are inexpensive, and my children LOVE the food! Most kids will not eat what they cannot identify, not at all the situation with the recipes in this cookbook. If you decide to purchase this cookbook, not only will you be delighted with the images of food that really are quite beautiful, you will be surprised with some very touching family photos that will leave you warm and fuzzy which certainly adds to the 'comfort' of the prepared meal.

For me I gotta watch out for any receipies with egg in it. But her book does look like a good one. Maybe I may order it some day along with Linda's cook books.
