      Note that this is a recipe which depends on gluten flour for substance and yeast for turkey flavor....I thought dietary yeast tasted like turkey gravy...hmmm. I was surfing the Net and found this entry for "Unturkey". It was a veggie-turkey product that failed to catch on, but has a cult fan base which has continued the existence of The Unturkey for the holiday dinner table, whathaveyou, by sharing the recipe which apparently comes from a vegetarian cookbook: " The New Now and Zen Epicure: Gourmet Vegan Recipes for the Enlightened Palate" written by Miyoko Nishimoto Schinner. Please share any experiences that you may have had with The Unturkey. This is the official fan base website.         I ate them all the time. Bascially, if you follow their directions, it's gross but if you follow mine, it's great. It also freezes well after cooking to be thawed later if you're not going to eat it all at once.

          Do you mean it's better if you freeze it? Is it the texture that's gross their way, or the flavor? And if it is the flavor, then is it a gross flavor, or is it an accurate flavor?

            It's the flavor that's gross with their way. Gluten by itself doesn't taste that good but it is spongey and can easily absorb a marinade or sauce dumped on it that is cooked with it. these veggie turkies all have a skin on them made of yuba. Yuba is a bi-product of making soy milk and is considered a delicacy in the East, but it blocks the main gluten flesh of the turkey from absorbing the marinade. the directions have one putting the marinade on the yuba. Rip the yuba skin open and pour the marinade inside making sure to cover the surface of the roast. It will taste so much better. I know they give a recipe for a marinade and it's not bad,but mine is tamari sauce with lemon, garlic and poultry spices. Sometimes I add a shot of Jack Daniels to the mix.
