I am but a simple housewife Actually, I ditched the corporate folks a long time ago, and as we say here in America, I'm Livin' on the Edge. Red Sox, all the way! (even tho' I think baseball is boring, people seem to think it's fascinating, so I'll root for 'em).

I cook some of Linda McCartney recipes and I love it so much! It took a while for me to get rid of red meat (Texas ya know) However, I lost 15 lbs. for four months after eating straight vegetables, fruits, drink juices, water, green tea (of course I use regular sugar) lil pasta, little rice and small pieces of bread. No more coca-cola it has sodium carbonate which contribute to high blood pressure. No snack just an apple or yellow mangoes and bananas Any kind of berries is fantastic too! Whoa! P.S. No more midnight snack! It is just a matter of decipline folks!

I'll offer one of mine if you like, and also would love a veggie burger recipe from Amandala85. Mine takes about two hours, total, FYI, including refrigeration time. I do enjoy the store-bought black bean veggie burgers, and for a long time was making them for breakfast, frying up a bit in some olive oil and topping w/a piece of cheese & some kind of veg or lettuces, etc. However, once in a while, when I have time, I'll do something like this: - One can of chickpeas, drained and rinsed; - One can of black beans, drained and rinsed; Mash the beans together by hand with a potato masher, or in the food processor (easiest in the food processor). Use any kind of beans you like, but I love the above combo because chickpeas give a lovely texture and flavor to them. Kidneys can be a bit too mushy for my taste, but you get the idea. You want some fairly hard beans but of course, pre-cooked. I use canned because I don't always have time to be soaking and cooking dried beans! Add: - One egg (if egg-free, use your fav vegan binder. I've tried agar-agar, and stuff like that, but prefer the egg) - One-two cloves garlic, chopped finely (optional) - Dash of sea salt - Freshly ground pepper - Curry powder or Italian spice (tsp curry powder or Tablespoon of Italian spice) - Bit of ketchup or plain tomato sauce, about 1/3 cup, or a small handful - Hot sauce (optional, I likes mah hot sauce, tho'! ) - Plain bread crumbs, enough to soak up the liquids but not enough to make dry (about 1/2 cup, or two handfuls) - Bit of olive oil (1-2 tsp) - Any kind of ground veg, like carrot (optional) - Chopped mushroom (I have to leave that and onion out for the teenager, but I'd chop and fry a bit first, as mushrooms will release water and make your burgers soggy if added raw, in my experience) Pulse bean mixture off and on till well-blended, but not all the way into a paste. If mixing by hand, switch to a sturdy fork for blending. You don't want to get it too mushy, nor too dry. Work with your hands if you feel like it (remember to take off your rings first!). Be gentle, fluff it up, lifting up from the bottom and turning over until everything is fully incorporated. Sprinkle a plate with more bread crumbs, and put some bread crumbs in a shallow dish (set aside). Form bean mixture into large balls, about the size of a baseball, then lay balls on the prepared plate. Grease up your hands with a bit of shortening or oil, then dip your palms into bread crumbs. Gently flatten the balls into burgers, pressing the sides together if they crack. A few cracks on the sides are okay, but if they fall apart, it's too dry and you'll have to add a bit more tomato sauce or something. You can also take a large water glass and use that if you don't want to use your hands. Grease up the bottom and dip in breadcrumbs, then use the bottom to flatten your burgers. If using a glass, set it in the fridge while you're mixing up your burgers to get it nice and cold (to avoid sticking). Refrigerate burgers for an hour. After an hour, get your grill or griddle ready. I prefer the griddle, or a very large fry pan, so as to allow for easy turning. Put a dab of some high temp cooking oil, such as almond oil, on your griddle or in your fry pan. Heat to medium high heat. When a drop of water sputters, it's hot enough. Using a spatula, set your burgers on the griddle, space them far enough apart so you can turn them easier (cook in batches if necessary). Very important: do not touch them or move them around once you've set them on the griddle; this is so you can get a good sear. Cook 3-4 minutes, then turn (I've been known to use two spatulas or a spatula and a butter knife to turn them more gently); cook 3-4 minutes more to sear the other side. If it starts smoking, turn it down, but usually almond oil will withstand a high temp (you can use peanut oil if you like, but that may give a flavor, and almond oil is more neutral in my opinion). Turn the heat down to medium or med-low to keep from burning. If using a fry pan, set a lid on top, venting a bit to allow steam to escape. Alternatively, you can put them on a cookie sheet and bake at 300 F (medium oven) for 10 minutes (cover loosely with foil). If using the griddle, I have a set of metal bowls that I can flip upside down to cover, or any tall pan lid that's heat proof will do. You want to heat the middles up a bit and make sure your egg is cooked, the veggies are a bit softened, and the inside is hot, that's all. Toppings I've used in the past are variety lettuce (the kind they sell as Spring mix here, with red leaves and dark green leaves, arugula, etc.), fresh spinach leaves, sprouts (any kind, I prefer the small ones tho'), a slice of cheese if you like, and condiments of choice (I like mustard, myself, or maybe mustard and ketchup mixed). Freshly chopped onion or a few rings of red onion have gone over well here in the past with my husband. Watercress is a nice choice as well, I just bought some yesterday and it tasted so good! Sometimes I'll serve the burgers with fresh spring veggies, like steamed fiddle heads (Maine ferns, which are picked wild and sold in the store here, before they are open, that's why they are called fiddle heads), asparagus (can be roasted in oven for about 10 minutes on med-high: drizzle asparagus with olive oil, add a bit of sea salt and cracked black pepper, roast till tender but not frizzly dry--just lovely! Thx. My oldest brother eats a lot of weird stuff and I follow suit My husband likes them, anyway (and he will eat anything except cottage cheese!). Sometimes it works and sometimes I catch things on fire... or there was the one time I set an apple pie, which had just come out of the oven and was in a blue Pyrex deep-dish pie plate, on a hot burner by mistake. Went to the store, and my husband called me to tell me my pie and pie plate had exploded all over the kitchen, throwing glass shards everywhere. I was in the middle of cooking a huge holiday dinner in a little galley kitchen in our old place in Portland. I was like, "okay, but where is the rice in this store?" Later, I realized how lucky we were that no one was in the kitchen at the time. My sister-in-law sent me a new pie plate to make up for it, lol. I once glanced at a Linda cookbook, saw a pick of veggie sausage in a roll and thought,"I could make something like that." I bought a package of veggie sausages I liked (Amys because they use mostly wholesome ingredients except for the textured protein concetrate) and spelt flour (my second favorite food). I made a crust out of the spelt and mixed ground flax to give it more fiber, make it taste better and make it softer. I mixed maple syrup in the crust becasue you can't have any sausage without syrup. well, they tasted wonderful but the flax made the rolls look dark and everybody thought it was poop.

I used to run a Vegan cantina and one of my sweet potato vegan pies got blown up in the same way. We all were in the kitchen and just got lucky, but we were picking glass out of stuff for hours. (It was in a glass pan).
My father-in-law, who was raised partly in UK, had the same thing happen to his Yorkshire pudding once. He knows all kinds of recipes, veg and non-veg, and always tells me to never serve him warm goat's milk. Apparently they fed that to boys in English boarding school? He is in his 80's and his mom and he were left alone in England after the Boxer Rebellion (his dad was trapped in Hong Kong and couldn't get out). Maybe I should get some curry recipes from him. I've made my own paneer and fried it in veg oil, that worked great. Then I tried to do the "saag" part with spinach and such, but whenever I go to an Indian restaurant, it tastes sooooo good! And I always get some naan bread to dip in it. Decadent! Just wish I could figure out the spices! Used to work with quite a few Indian people and we'd go to a restaurant and my co-worker would whisper, "I can make this much better at home." She was from Bangalore originally and has lived in the states for most of her adult life. I wish I'd gotten some recipes from her! She told me how she made the dessert with carrots and milk (?) but that was 11 years ago. Ah well. I've been doing a lot better eating more vegetarian lately. Today we remember a very special lady who was and still is an inspiration to many of us. Thinking of Paul, Heather, Mary, Stella and James on what would have been Linda's 69th birthday. She will always be missed.

its all been said on here about linda. infact i think a part of paul died with her on that dark day in 1998. she was just an amazing person and i often think about her.

Happy 69th Birthday in heaven, sweet lady Linda. I know a part of Paul died with her when she passed away. RIP Linda. Thinking of Paul, Heather, Mary, Stella, James and the grandkids Linda never knew.

Linda was a great lady and made a huge impact on Paul's life, especially after the Beatles broke up. I like to think of her not only walking with Paul, but watching over all the creatures who have no voice of their own. I miss her. Cheers, L

Top woman, could not give a flying **** what people thought, loved and loyal to her family and stood up for what she believed. Paul and family were lucky that she touched their lives. Normally with Paul it is the other way round, in this case Linda was truly the special one. xxx
