1 cup flour 1 tsp baking powder pinch of salt 1 egg 1 Tbs oil (not butter) 1 vanilla pod (or 2 tsp vanilla extract) 4 Tbs ice cream Mix the dry ingredients. Add the wet ingredients, ice cream last. You want it to melt as little as possible. Bake at a low temperature (under 350F) until they crack open like a dropped cantaloupe, 15ish minutes. Normally, butter is better than oil with cookies, but with the ice cream, you want oil. Also, chilling cookie dough before handling it is always better, unless it has ice cream in it. You want to bake it before it's a liquid slop. The vanilla gives it a golden color, but if you use a different flavor ice cream, it's going to look and taste different. Vanilla ice cream works a lot better than chocolate. With chocolate, it starts to burn before the cookies are baked. Vanilla ice cream cooks slower, apparently. I don't know why.
