DID YOU KNOW??? One cup of sweet potatoes contain about 30mg of beta carotene (Vitamin A)....compare that to the 23 cups of broccoli required to achieve the equivalent! I like them anyway, but it's always nice to learn new ways to prepare them. Alton Brown from Food Network, (a favorite of mine cause he gets into the chemistry of food, and he's funny as hell )suggests adding l chopped chipotle chile and a splash of adobo sause from the can contents...I'll have to try it....it sounds very good. Oh, he also suggests steaming, then mashing, for best consistency and flavor. Enjoy!

That's great to know because I love sweet potatoes, but don't have them very often. I like them baked with marshmellow (actually 'Fluff') on top - a lot a sugar (and carbs in the potatoes). But it's basically all fat free...and for whatever reason, my body seems more capable of burning through sugars (in reason) more so than any of the fats. The women at work tell me it's because of 'I'm a guy'
