Hi Everybody Hope you are doing well Because of the heat I have lost much of my appetite so have been living on salads and popsicles. Here is a great, easy and delicious vegan main dish salad. YELLOW RICE SALAD WITH ROASTED PEPPERS AND SPICY BLACK BEANS for dressing: 4 teaspoons ground cumin 1/4 cup fresh lime juice 2 1/2 tablespoons vegetable oil 1/2 teaspoon turmeric 2 cups water 1 cup basmati rice or any long grain rice 1 teaspoon salt 1/2 cup thinly sliced green onions 1 15- to 16-ounce can black beans, rinsed, drained 1/2 cup chopped roasted red peppers from jar 1/2 cup chopped green bell pepper 1/3 cup chopped fresh cilantro 1 1/2 teaspoons minced chipotle chilies* Stir 3 teaspoons cumin in small dry skillet over medium heat just until fragrant, about 1 minute. Remove from heat. Whisk lime juice and oil into skillet for dressing. Stir turmeric and remaining cumin in heavy medium saucepan over medium heat until fragrant, about 1 minute. Add 2 cups water, rice and salt; bring to boil. Reduce heat to low and cover; simmer until water is absorbed, about 15 minutes. Cool rice. Mix onions and half of dressing into rice. Season with salt and pepper. Combine black beans, all peppers, cilantro, chipotle chilies, and remaining dressing in medium bowl. Toss to coat. Season with salt and pepper. Mound bean mixture in center of platter. Surround with rice salad. *Chipotle chilies canned in a spicy tomato sauce can be found in most supermarkets in the ethnic food section. If you can't find them just add some hot sauce to taste or eliminate if you don't like spicey food. Enjoy!

Hi, Viv! I have the same problem. I drink cold cold water, juices, and cold soup. Hot soup or or hot meal is just impossible to eat during this awful summer heat. our temperature 95 degrees. Thank you for posting this cool recipe.

Cucumber Salad Vegetarian French 10mins plus chilling Cold Vegetarian Ingredients: 1 1/2 Cucumbers 2 tbsp Finely chopped fresh Parsley 1 tbsp freshly chopped Tarragon 8 tbsp Olive Oil 2 tbsp White Wine Vinegar Salt and Black Pepper 1 teasp Lemon Juice to serve Watercress and Lettuce leaves to serve Instructions: 1. Peel and thinly slice the cucumbers. 2. Combine the olive oil, wine vinegar and salt and freshly ground black pepper in a small bowl and mix well. 3. Place the cucumber slices in a bowl. Pour over half the dressing and toss the slices in it to marinate. Chill in the fridge for at least 30 minutes. 4. Just before serving, transfer the sliced cucumber to a large sieve or colander and drain off the excess dressing. 5. To serve - arrange the drained cucumber slices in a glass salad bowl or flat serving dish. Pour over the remaining French dressing and toss the salad gently. Sprinkle with finely chopped parsley and tarragon, and garnish with the lettuce leaves and watercress sprigs. Serves 4

Okay, this isn't a recipe, but this is how most Mexicans eat cucumbers: Ingredients: cucumbers lemon Tapatío sauce salt Wash and peel the cucumbers. Slice them. Add lemon, Tapatío sauce and salt to taste. You can also add Jicama sticks, watermelon, cantaloupe and pineapple, but then you have to call it "Pico de Gallo".

What a great idea they are so refreshing you all have inspired me so here is another quick, easy refreshing cucumber recipe...no cooking needed and for me enough for a meal. COLD CUCUMBER AND MINT SOUP 3 cucumbers, peeled, seeded, and chopped, plus 1 cup peeled, seeded, and finely diced cucumber 1 cup plain yogurt (if you can find greek style firm yogurt it is worth it in this recipe..I used all greek style yogurt and left out the sour cream) 2/3 cup sour cream 1/2 teaspoon English-style dry mustard, or dijon mustard 1/4 cup chopped fresh mint leaves salt and pepper to taste cucumber slices and mint sprigs for garnish In a blender or processor puree chopped cucumbers, yogurt, sour cream, mustard, and salt and pepper to taste and transfer to a bowl. Chill soup at least 6 hours or overnight. Stir in finely diced cucumber and chopped mint and garnish soup with cucumber slices and mint sprigs. Peace and have a great weekend

I hope you all will also post some of your recipes Here is my first Monday veggie recipe; it's fast,easy and delicious and comes from Gourmet Mag ORZO WITH FETA TOMATOES AND DILL 3 tablespoons extra-virgin olive oil 2 cups cherry tomatoes, halved ( or use grape tomatoes or reg. chopped tomatoes) 1/2 cup chopped dill (or less to taste) 1 teaspoon grated lemon zest 1 cup orzo (this is pasta shaped like rice and greek style but may use any small pasta like elbows, bowties etc.) 1 1/2 cups crumbled feta (6 ounces) Toss together oil, tomatoes, dill, zest, and 1/2 teaspoon each of salt and pepper in a large serving bowl. Let stand at least ten minutes. Meanwhile, cook orzo in a pasta pot of boiling salted water (1 1/2 tablespoons salt for 4 quarts water) until al dente. Drain orzo and toss with tomato mixture. Nellie is posting a healthy fruit salad Monday June 30, 2008 Fruit Salad 1 Serving Red or green apples Some slices of peaches, sweet pineapple maraschino cherries, blueberries, red or green grapes, pears Green or red gelatin 2 tsps light cream 1 tbspoon sugar 1 tspn vanilla extract (optional) 3 stalks of celery thinly slice Cut apples into tidbits and add celery, and mixed fruits. Add light cream, vanilla, sugar and toss well. Chill until ready to serve.

Hi Gabbi 2: good to 'see' you here...I hope you are doing well Sounds like you are going to do some fancy cooking. I have some recipes for you but I have to admit that I haven't tried them, although they look easy enough and the ingredients show me that they would be pretty good Here's the first one: VEGAN BECHAMEL SAUCE BECHAMEL SAUCE RECIPE: 4 Tbsp margarine 1/3 C flour (or more for a thicker sauce) 2 1/4 C non-dairy milk salt to taste pinch of nutmeg -On low heat melt the margarine. Take off heat. -Slowly sift flour in while stirring. -Add the non-dairy milk a little at a time while stirring. -Bring to a boil while stirring slowly. It will thicken. -Take off heat. Add salt and nutmeg. It's so simple how could you go wrong Here is another that looks popular: VEGAN BECHAMEL SAUCE II 2 cups Soymilk 1½ cup ;water ¼ cup Cashew nuts 1 teaspoon Sea salt ⅛ teaspoon White pepper dash Nutmeg ¼ cup Cooking oil, preferably sesame or corn oil ½ cup Unbleached flour Blend the soymilk, water, cashews, and seasonings in a blender until smooth. Pour into a double boiler and heat. Meanwhile, heat the oil in a small saucepan. Add the flour to make a roux. Then whisk it into the heated soy milk mixture to make a light, creamy sauce, for a thicker sauce add more flour I would try the first one, in fact I think I will Let me know how it goes for you. Hi Everybody Here is a delicious and easy summer grilling recipe..would work great for those celebrating the 4th Of July with a cook-out NACHOS ON THE GRILL 16 ounces baked or fried tortilla chips (combination of blue and yellow if you want) 3/4 pound Monterey jack cheese, shredded 3/4 pound white Cheddar, shredded Smoked Tomato Relish, recipe follows Green Chile Creme Fraiche, recipe follows Preheat grill. Place a large cast iron pan on the grates of the grill and let heat for 5 minutes. Place 1/3 of the chips in the pan and top with 1/3 of the cheese. Repeat to make 3 layers. Close the cover of the grill and grill until the cheese has melted, about 5 to 7 minutes. Remove the pan from the heat and top with the toppings. SMOKED TOMATO RELISH 8 plum tomatoes 1/4 cup canola or olive oil, plus more for brushing on the tomatoes Salt and freshly ground pepper 1/4 cup red wine vinegar 2 teaspoons chipotle pepper puree (or any hot sauce) 1 small Spanish onion, finely chopped Preheat grill to high. Brush tomatoes with oil and season with salt and pepper. Place the tomatoes on the grill and grill until charred on all sides. Remove from the grill and coarsely chop. Whisk together the vinegar, chipotle puree, onion, and 1/4 cup of canola oil in a medium bowl. Add the chopped tomatoes and season with salt and pepper, to taste. Let stand at room temperature for 30 minutes before serving. GREEN ONION CREME FRAICHE 1 pint creme fraiche or sour cream 1/2 cup thinly sliced green onions Salt and freshly ground pepper Combine creme fraiche and green onions in a medium bowl. Hi Everybody 2: Hope you all are doing great! Here is another recipe to support Pauls Meatless Monday This is a veggie burgur recipe I tried recently and I think it tastes much better than a regular burger! Here tis: AMERICAN VEGETARIAN BURGUR 1 pound (about 4 large) cleaned portabello mushroom caps, or use 1 pound crimini muchrooms, which are baby portabellos which are usually less expensive, finely chopped in processor or by hand and drain on paper towels 1/3 cup walnuts, finely chopped 7 Tablespoons seasoned Italian breadcrumbs, or more for desired texture 2 Tablespoons finely chopped onion 1/4 teaspoon salt if you want pepper 4 Tablespoons crumbled bleu cheese I just put all the ingredients in a processor and chopped it that way Mix everything together with your hands, until consistancy is right to form into 4, 1'2 inch thick patties. Grill outdoors or indoors about 3-4 minutes a side, To serve place on a bun or roll. Top with whatever you like! Here is a recipe for PEAR MAYONNAISE, which goes great with the burgers, is you want to try it: 1 ripe pear 1 tablespoon olive oil 1 tablespoon fresh lime juice 1 tablespoons mayonnaise pepper Peel and chop pear; saute in small pan with olive oil and lime juice. Cook until soft and musy, about 2-3 minutes. Puree and cool. Stir in mayo and pepper to taste, refrigerate Happy Meatless Monday
