In case you don't already know this, gelatin is made from the bones, skins, hoofs, and tendons of cows, pigs, fish and other animals. It is animal protein used especially for its thickening and gelling properties. It is a non-vegetarian product. There are other thickeners available for use in recipes, which you can find online by googling gelatin substitutes.

Hi (((Viv))) I've been crazy busy lately, but I wanted to let you know I'm going to try your Orzo recipe tonight, as I just happen to have all those ingredients sitting in my fridge---it's perfect timing! Here's a recipe for a quinoa salad I made for a potluck on the 4th, that everyone liked. Hope you do, too! QUINOA SALAD with MANGOES and CURRY DRESSING Serves 4 1+1/3 cups quinoa, rinsed thoroughly 2 large mangoes 1 jalapeno chile, seeded and diced 3 scallions, including an inch of the greens, thinly sliced Curry vinaigrette (below) 1/3 c. almonds, roasted Salt Bring 3 cups water to a boil in a saucepan, then add 1/2 tsp. salt and the quinoa. Lower the heat, cover, and simmer until the quinoa is tender, 12 - 15 min. Drain. Cut the mangoes. Stand each one upright and slice down either side of the seed, which runs lengthwise through the center of the fruit. Score the two pieces, then bend the skin. Cut off the squares of mango where they attach to the skin. Toss the quinoa with the mangoes, chile, scallions, and vinaigrette. Chill. Chop the almonds and add them last so that they'll stay crisp. CURRY VINAIGRETTE 1 garlic clove (or more, to taste; I love garlic!) Salt 2 TB. yogurt, mayonnaise, or sour cream 2 tsp. curry powder 1+1/2 TB. fresh lemon juice 5 TB. light olive or good vegetable oil 2 TB. finely chopped cilantro Pound or mince the garlic and 1/4 tsp. salt in a mortar until smooth, or put the garlic through a press. Combine the garlic and salt with the yogurt and curry in a small bowl. Stir in the lemon juice, then whisk in the oil. Let stand for 15 min., then stir in the cilantro. Taste for tartness and salt and adjust to taste. Let me know what you think of this dish. Quinoa is so good for us!

My Breakfast Toast 1 block tofu 1 cup soy milk Cinnamon Vanilla flavor 4 slices bread of your choice Blend everything except the bread. Dip the bread into the mixture and fry in olive oil until slightly brown) Don't burn) Top with maple syrup.

Strange thing is I have a box of quinoa in my cupboard and didn't know what to do with it...hope it is still good I will try this as soon as the mango I have ripens(about2-3 days) I know what you mean about being busy, my life is now officially insane lol I will pm you within the next couple of days as I want to keep in touch. What is your favorite meal on a hot & humid summer day? For me, keeping it light & filling is a lovely homemade fresh fruit salad. Mandaarin orange slices, pineapple chunks, sliced peaches, fresh strawberries & blueberrie. Yum!

Hi Gypsy Girl My fav treat on a hot humid day (all we have now) would by ice pops...I almost live on them in the summer These are different and delicious a cool way to eat fruit MEXICAN FRUIT POPS In a medium bowl or measuring cup with spout, combine 2 cups of peeled fruit of your choice (such as pineapple, papaya, bananas, strawberries,mangos etc.) coarsely pureed with 1 to 4 tablespoons superfine sugar and 1/2 to 2 tablespoons fresh lime juce (adjust sugar and juice to taste) Stir until sugar is dissolved. Fill molds, leaving about 1/4 inch of space to allow for expansion. Set lids, if using and insert sticks Freese until firmly set at least 2 hours Enjoy

Thanks MustangSally! Sounds great. Fresh strawberries sliced up in a bowl. Then pour freshly squeezed orange juice over them. Add a teaspoonful of sugar.

Hi everybody 2: hope you are doing well Here is one of my fav ice pop recipes...you can even have this for breakfast which I do sometimes ESPRESSO FROZEN POPS In a pitcher combine 2 cups brewed expresso or very strong coffee, 1/2 cup chocolate syrup, 6 tablespoons sugar , 2 teaspoons vanilla extract and 6 tablespoons milk. Pour mixture into 8 pop molds. Insert sticks and freeze until solid YUM-O For Mexican Mocha Pops, add 2 tablespoons Kahlua and 1/4 teaspoon cinnamon to mixture For Thai Mocha Pops, replace sugar and milk with 6 tablespoons sweetened condensed milk Enjoy! I will post some real food recipes soon...I realize not everyplace in the world is as hot as it is in florida now

MACCAS MEATLESS MONDAY Hi 2: hope you all are having a good summer. I don't cook as much in the summer because I don't tend to spend very much time indoors, but, here is an easy, fast, economical, healthy and delicious recipe for those on the other side of the world who are in winter or those who just feel like turning on the stovetop: :=) ITALIAN LENTIL STEW (serves 4 or 1 with great leftovers) 1 1/2 tablespoon olive oil about 8 small red-skinned potatoes halved or 4 large quartered(if you don't have red-skinned just use what you have and peel first) 1 1/2 cup finely chopped onion 2 garlic cloves, finely chopped 3/4 cup dried lentils (rinsed) 1 can (15 oz) diced tomatoes including liquid 1 bay leaf 1 teaspoon dried oregano salt and pepper to taste 1/2 cup basil leaves, lightly chopped (optional) Heat the oil in a heavy pot on medium-high heat. Add the potatoes and cook until browned about 8-10 minutes-remove potatoes to a plate. Add the onions to the pot, saute for about 5 minutes, then add the garlic. Cook until the onions are light brown about 3-4 minutes more. Add the lentils, tomatoes with liquid, bay leaf and oregano. Add 3 cups of cold water. Bring the stew to a boil, reduce the heat, and simmer uncovered for 30 minutes. Add the potatoes back in the pot, and simmer until the potatoes and lentil are soft (about 10 minutes) adding 1/2 cup of water, if needed. Remove the bay leaf and season the stew to taste with salt and pepper. For best flavor make the stew a day ahead and reheat in same pot, covered over medium heat-stirring occasionally. Add a little water if stew is too thick...or just microwave to heat. If you want sprinkle with fresh basil to serve-delish ps-this recipe has 16 grams of protein per serving fantastic for veggies and is VEGAN Enjoy

Meatless Monday...Monday Corn & Zucchini Quesadilla w/ Tomato Salsa & Avocodo Relish 3 Flour Tortillas (6") 1 cup Grated Montery Jack 1 cup Grated White Cheddar 2 tb Diced Red Onion 1 Jalapeno, seeded & minced 1 cup Suchinni, julienned 3/4 cup Corn kernels Salt & pepper to taste Tomato Relish Avocado Relish I. Prepare the salsa and relish. Set aside. Heat oven to 450 degrees 2. Position tortillas on an ungreased cookie sheet. Sprinkle half the cheeses, onion, jalapeno, zuchinni and corn on each. Season to taste with salt and pepper. II. Place one of the two tortillas atop the other and the third torilla atop the second. Transfer to the oven and bake until cheese has melted and tortillas are becoming crisp (about 10 min.). III. Cut tortilla into quarters, garnish each with tomato salsa and avocado relish and serve hot.

Hi Nellie 2: thanks for the great vid of Paul "Here, There and Everywhere" is one of my fav songs of all time. I love to listen to Paul/Beatle music when I cook...it's one of my favorite things to do. Here is an easy, fast, healthy recipe that I make for breakfast, lunch or dinner COTTAGE CHEESE PANCAKES 1 cup flour 1 teaspoon baking powder 1/2 teaspoon baking soda 2 tablespoons sugar 4 eggs (beaten) 16 ounces small-curd cottage cheese or ricotta (I like ricotta) 3 tablespoons vegetable oil for frying Mix dry ingredients together. Mix cottage or ricotta cheese with eggs. Add the dry ingredients to the eggs and cheese mixture. Stir well. Heat oil in a large frying pan and drop pancake mixture by spoonfuls into hot frying pan. Flip pancakes when the top bubbles. We have blueberry season here and I like to drop a few into the uncooked side before I turn them....delish These are also great with a side of fruit salad Enjoy
